Ingredients
What you need:
1 Egg, raw
1 Egg Yolk, raw
1 tsp. Lemon Juice
1/4 tsp. Sea Salt
1/2 c. Butter salted, melted
1/2 c. Bacon Fat, room temp.
Preparation
What to do:
In 2c. jar place Egg, Egg Yolk, Lemon Juice and Sea Salt, let sit until room temp.
Mix melted butter with Bacon Fat in 1 cup liquid measuring cup
Fat should be close to room tempter but thin pourable
With Immersion Blender, blend ingredients in jar together
Slowly add fat, constantly blending
Keep blending until all fat is combined
The Mayo will look creamy but thin
Place in refrigerate for 2-3 hours
Stir with butter knife occasionally
Mayo will be smooth and thick
Use or store in sealed jar in fridge
