Ingredients

10 oz. Beef Heart, bite size chunks

5 oz. Beef Bacon, bite size pieces

4 Tbsp. Beef Bacon Fat

1 tsp. Sea Salt

Preparation

In hot frying pan add 1 Tbsp. Fat, Heart and Bacon

Fry until Beef Heart is about medium rare (3-4 minutes)


Move to food processor

Add 2 Tbsp. Fat and Salt into food processor


Put 1 Tbsp. Fat into warm frying pan (not over heat)

Beat until smooth

Pour into 2 Ramekin dishes

Smooth top with spoon

Divide melted Fat from frying pan over Pate


Place in fridge overnight

Remove from Ramekin dishes, cut and serve or store in lidded container
