About the Recipe

Ingredients
Meatloaf:
2 lb. Ground Beef, raw
1/4 c. Smoked Gouda Cheese, grated
2 Egg Yolk
1 Tbsp. Mustard (optional)
2 tsp. Sea Salt
12 - 1 inch by 1/2 inch cubes of Old Cheddar Cheese

Topping:
1/4 c. Grana Padano/Parmesan Cheese, grated
1/4 c. Cheddar Cheese, grated
1/4 c. Feta Cheese, crumbled
Preparation
Preheat oven 350°  Â
Butter 1.4L Glass Loaf Pan, set aside
In bowl hand mix together all Meatloaf ingredients except Smoked Gouda
Divide Meatloaf mixture into 3 equal portions
Pack 1/3 of the Meatloaf mixture in bottom of loaf pan
Place 6 cheese cubes on Meatloaf
Pack 1/3 of the Meatloaf mixture on cheese cubes evenly
Place 6 cheese cubes on Meatloaf stagger from layer below
Pack last 1/3 of the Meatloaf mixture on cheese cubes
Mix Topping together with hands in small bowl
Sprinkle evenly on top of meatloaf
Bake 60 – 65 minutes
Let stand 5 minutes
Move to cutting surface
Cut and serve
