About the Recipe

Ingredients
1 Whole Large Egg & 1 Egg Yolk
1 tsp. Lemon Juice
¼ tsp. - ½ tsp. Sea Salt
1 tsp. Mustard (optional)
1 c. Duck Fat, pourable
Preparation
Take Duck Fat out of fridge place in 1 cup measuring cup
Let sit on counter until room temperature and pourable
In 2c. glass jar add Egg, Lemon Juice, Sea Salt and Mustard
Let sit on counter until room temperature
Using a hand blender beat Egg ingredients together
Very slowly add Duck Fat, blend constantly
Mayo will thicken as you slowly add Duck Fat
Scrape remaining fat out measuring cup into mayo
Give it one final good blend
You can use it right a way or seal, place in fridge
~ If you have a bit less than 1 cup of Duck Fat that is fine
~ I get the duck fat from roasting a duck
