About the Recipe

Ingredients
4 Eggs
4 Egg Yolks
1/8 c. Sour Cream, full fat
1/8 c. Feta Cheese crumbs
2 oz. Pastrami, chopped
.2 oz. Pastrami cut into 8 pieces
1/3 c. Cheddar Cheese, grated
Preparation
Preheat oven 350°F
In Bowl place Eggs and Egg Yolks, beat with mixer
Add Sour Cream, Feta Cheese, and chopped Pastrami
Mix together
Using 1/8 cup scoop mixture into each muffin cup (mix mixture with cup to make sure you get some Pastrami and Feta in every cup)
Loosely fold Pastrami pieces and place one in each muffin cup
Using 1/8 cup dived remaining mixture amongst muffin cups
Sprinkle Cheddar Cheese on top of each Egg Cup
Bake 21-23 minutes
Remove from muffin tin place on cooling rack or serving plate
Enjoy
