About the Recipe

Ingredients
¾ c. Coconut Oil
1/8 c. Monk Fruit Sweetener, or similar
2 Tbsp. Nut Butter
1 Tbsp. Agar – 4 Tbsp. Boiled Water
½ tsp. Xanthan Gum
2 tsp. Instant Coffee
1 tsp. Almond Extract
½ tsp. Vanilla Extract
¼ tsp. Sea Salt
2 c. Almond Flour
¼ c. Lupin Four
½ c. Chocolate Chips (optional)
Preparation
In a bowl add Coconut Oil, Monk Fruit Sweetener and Nut Butter
Mix together with a mixer
In a small bowl add Agar Powder and Boiled Water, mix together
Add to Coconut Oil mixture bowl
Add Xanthan Gum, beat
Add Instant Coffee, Vanilla Extract, Almond Extract, and Sea Salt mix
Add Almond Flour and Lupin Flour, mix
Add Chocolate Chips, blend
Scoop with cookie scooper and place on a parchment paper cookie sheet
Bake 350° oven for 20 - 22 minutes
Leave sit on pan until totally cold
Move to a container and store in the fridge
Lupin Flour is not a Keto flour but it is a Low Carb Flour
To keep carbs low leave out chocolate chips or use dark chocolate chips and use 1/8 c. instead of 1/2c.
