Ingredients
½ c. Coconut Oil
½ c. Monk Fruit Sweetener
1 Egg
1 tsp. Vanilla Extract
1 c. Bobs Red Mill Gluten Free 1 to 1 Baking Flour
½ tsp. Baking Soda
½ tsp. Xanthan Gum
1 c. Beet Chips, crushed
Preparation
Cream Coconut Oil and Monk Fruit together well
Beat in Egg and Vanilla
Add Flour, Baking Soda, and Xanthan Gum
Mix well
Add Beet Chips
Mix well
Using cookie scooper scoop out cookie dough
Roll into balls and flatten on a parchment paper covered cookie sheet
Bake in 350 oven for 18 minutes turning pan at 9 minutes
Let cool then transfer to a cooling rack
