Ingredients
4-5 Carrots, washed, pealed, sliced
2-3 Dates, pitted and chopped
¼ c. Pine nuts
1 ½ Tbsp. Coconut Oil, melted
½ tsp. Cinnamon
¼ tsp. Sea Salt
Preparation
Place Carrots in a baking dish
Add Dates and Pine nuts
Sprinkle with Cinnamon and Sea Salt
Pour melted Coconut Oil on top and stir well
Cover
Place in a pre-heated 350° oven
Bake 40-45 minutes
Test carrots to make sure they are your desired tenderness
