Ingredients
1 ¼ c. Avocado Oil
5 Eggs, large
¾ c. Coconut Sugar
1 Tbsp. Cinnamon
¼ tsp. Cloves
2 tsp. Vanilla Extract
1 tsp. Sea Salt
2 c. Bob’s 1 to 1 Gluten Free Flour
2 tsp. Baking Soda
½ tsp. Xanthan Gum
3 c. Carrots, grated
¾ c. Raisins, chopped
Preparation
Lightly grease a Bundt pan w parchment paper on bottom of pan only
Blend together with a blender Avocado Oil, Eggs, Coconut Sugar, Spices, and Sea Salt
Add Flour, Baking Soda, Xanthan Gum onto Egg mixture
Blend together with blender lightly
Add Carrots and Raisins
Use spatula combine
Pour into Bundt Pan
Bake 350° for 45-50 minutes
Remove from oven and let stand on rack for 5-10 minutes
Loosen the edges with a knife carefully
Turn on to rack and remove pan
Cool completely
Move to serving plate
