Ingredients
6 Eggs
½ c. Avocado Oil
2 tsp. Vanilla Extract
1/3 c. Coconut Sugar
½ c. Coconut Flour
½ tsp. Sea Salt
½ tsp. Baking Soda
¼ tsp. Xanthan Gum
1 tsp. Cinnamon
½ tsp. Nutmeg
¼ tsp. Allspice
1/8 tsp. Cloves
3 c. Carrots, grated
½ c. Coconut, unsweetened
½ c. White Chocolate Chips
Preparation
Place first 4 ingredients into a bowl and beat with a blender well
Add Coconut Flour, Sea Salt, Baking Soda, Xanthan Gum, Cinnamon, Nutmeg, Allspice, and Cloves to egg mixture
Beat with blender until mixed
Scrape clean the bowl
Add Carrots, Coconut and White Chocolate Chips
Using a spatula fold together
Spoon Carrot Muffin mixture into 15 parchment paper covered muffins
Bake 350° for 35 minutes
