Cauliflower "Potato" Salad

Ingredients

What you need:

1 medium-large head of Cauliflower (steamed just enough to take the crunch out)

1/2 c. Radishes, sliced

1/2 c. Green Onion, sliced

1/2 c. Dill Pickles, diced

1/2 c. small Cherry Tomatoes, quartered

6 oz. Carrot, grated

1 tsp. Sea Salt

1/2 tsp. Pepper (or to taste)

1 tsp.  Parsley, dried or fresh

1 Tbsp. Mustard

1 1/2 - 2 c. Mayo

Preparation

What to do:

Wash and clean all veggies. The cauliflower is the potato in this salad

Place all ingredients in large bowl, and stir well

It can be served or put in sealed container and store in fridge
