About the Recipe

Ingredients

8 Eggs

½ c. Coconut Oil, melted

½ c. Dairy Free Milk

¼ c. Maple Syrup

1 tsp. Cherry Extract

½ tsp. Lemon Juice

¼ tsp. Baking Soda

½ tsp. Sea Salt

½ c. Pecans, chopped (optional)

2/3 c. Coffee Flour

¼ c. Coconut Flour

Preparation

In a medium bowl add eggs beat well with a blender


Add next 7 ingredients and beat with blender until mixed

~ If coconut oil is warm pour into bowl while running blender


Add Flours and mix in with a spatula or blender a little


Add Pecans and fold into the batter


Place in a 9 ¼ x 5 ¼ loaf pan

Bake 350 for 55 – 60 minutes


Remove from pan and cool on cooling rack

Cool completely before cutting or cut next day
