About the Recipe

Ingredients

Wet Ingredients:

8 Eggs

1/2 c. Nut Milk

1/2 c. Coconut Oil, melted

1/4 c. Maple Syrup

1/2 tsp. Lemon Juice

1 tsp. Cherry Extract

 

Dry Ingredients:

2/3 c. Coffee Flour

1/4 c. Coconut Flour

1/2 tsp. Sea Salt

1/4 tsp. Baking Soda

1/2 c. Pecans, chopped

Preparation

Preheat oven 350°F

Beat Eggs with mixer

Add remaining wet ingredients and beat

~ If coconut oil is warm pour into bowl while running mixer

Add dry ingredients except for Pecans

Using a spatula stir in dry ingredients, if you use mixer the flour will fly

Once dry ingredients are wet use mixer to mix well

Add Pecans mix with spatula

Place in a 9” x 5” parchment paper covered loaf pan

Bake 55 – 60 minutes

Remove from pan and cool on cooling rack on parchment paper 10 minutes

Remove parchment paper and let cool completely

Cut and serve or store in a sealed bag or container in fridge
