Ingredients
7oz. Dates, pits removed
½ c Brazil Nut, whole
½ c Macadamia Nuts, whole
1/2 tsp. Salt
1/2 tsp. Vanilla Extract
½ tsp. Almond Extract
1/3c. -1/2 c. Shredded Coconut, unsweetened for rolling cookies in
Preparation
Place all ingredients into a food processor, except Shredded Coconut
Beat until well blended and will stick together when you grab a little bit between your fingers
Using a cookie scoop, scoop out cookie balls
Roll cookie dough between the palm of your hands
Add some Shredded Coconut to your hand and roll the cookie in the Shredded Coconut to coat your cookie
Place on a plate and refrigerate for about 3 hours
Move to a bowl with a lid and store in fridge or freezer

~If your cookie dough doesn’t stick together add an extra date or two and blend well
