About the Recipe

Ingredients

Egg Replacement for 1 egg

½ c. Coconut Oil

½ c. Monk Fruit Sweetener

2 tsp. Vanilla Extract

½ c. + 1 ½ Tbsp. Peanut Butter, smooth


1 tsp. Xanthan Gum

½ tsp. Baking Powder

½ tsp. Baking Soda

½ tsp. Sea Salt


2 c. Rolled Oats, gluten free

½ c. Gluten Free 1 to 1 Baking Flour

Preparation

Prepare Egg Replacement


Place first 5 ingredients into a bowl

Blend together well with a blender


Add next 4 ingredients and blend well


Using a large spoon, spoon Gluten Free flour into a measuring cup making sure not to pack flour

Add Gluten Free Flour and Rolled Oats to mixture

Blend well


Heat oven 350

Using cookie scoop, scoop cookie dough onto a parchment lined cookie sheet

Bake 14-16 minutes

Leave on pan undisturbed until cool

Move to a wire rack and continue to cool and firm up
