Ingredients
8oz. Garlic, cleaned
1 ½ c. White Vinegar
¼ tsp. Sea Salt
1/8 tsp. Oregano, dried
Preparation
Peel your garlic cloves and cut off the end
Fill bowl in sink with cold ice water big enough to fit all Garlic in
Boil enough water in a pot to cover Garlic
Drop in Garlic for 1 minute (no need to get back to boil, just start timer)
Pour Garlic in a colander in the sink
Pour drained Garlic into ice water to stop cooking
Cool totally
In a pot mix White Vinegar, Sea Salt, Oregano
Bring to a boil, dissolve salt in Vinegar Â

Move Garlic to jars 3 – 8oz. Jars
When Vinegar mixture is ready pour equal amounts into jars with garlic
Seal lids
The jars should seal from the hot vinegar mixture
Garlic may turn Blue or Purple they are fine to eat
Store Garlic jars in fridge
Wait a month before eating
I don’t do a water bath because I keep the jars in the fridge and they aren’t meant to last years
