About the Recipe

Ingredients

1/2 c Butter, room temp

1 c. Coconut Sugar

3 Eggs

 

3 tsp. Baking Powder

1/2 tsp. Sea Salt

1/2 c. Milk

1 tsp. Almond Extract

1 tsp. Xanthan Gum

1 1/2 c. Bob’s 1-1 Flour

1/2 c. Almond Flour

3 c. Rhubarb, sliced

 

Topping

1/2 c. Coconut Sugar

3/4 c. Bob’s 1-1 Flour

3/4 c. Almond Flour

1/2 c. Butter, firm

1/2 tsp. Almond Extract

Preparation

What to do:

Preheat oven 350°

Parchment paper line 9 x 13 cake pan

In bowl mix together Butter, Sugar and Eggs

Add Baking Powder, Sea Salt, Milk, Almond Extract, and Xanthan Gum

Beat until combine

Add Both Flours

Mix well, and scrape bowl

Add Rhubarb and mix with spatula

Scoop into prepared baking dish evenly

Measure Topping ingredients into bowl

Mix with hand, just enough to make crumbs, don’t melt the butter

Sprinkle crumbs on cake evenly

Place in oven 30-45 minutes

Test with tooth pick, if it comes out clean cake is done

Let sit in pan 5-10 minutes then move cake out of baking pan onto cooling rack

Cut when cool
